Collard Green Feed

The origins of the Collard Feed

About five years ago, some people who grew up in southern states like Georgia and Alabama were talking with people who had attended college in that area.  Their conversation turned to food – and they fondly remembered slow cooked, down home collard greens.  There was an abundant crop that year, growing in the garden next to the church. Those greens are also familiar to Africans, including some who are members of Oakland Church (now part of Living Spirit UMC).

The result of that conversation was a decision to offer a fall meal of collard greens.  It was a success, with some visitors saying that it had been 20 years since they enjoyed such a meal. 

The menu has evolved and now includes cornbread, side dishes of red beans and rice or black-eyed peas, peach cobbler and desserts and everyone’s favorite Minnesota church beverage – coffee.  (Tea is also available.)  Sometimes African/Liberian versions of the greens are available.  

Minnesota is a great place to grow greens.  An early frost sweetens them up.  Living Spirit UMC has a small garden plot, but it is big enough to supply the greens for the meal.
